Here is an easy fruity sponge pudding recipe that allows you great flexibility since you can use just about any type of fruit.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients:<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>3 cups fruit (canned or fresh)\n\t<\/li><li>80g butter, softened\n\t<\/li><li>\u00bd cup sugar\n\t<\/li><li>1 egg\n\t<\/li><li>\u00bd cup milk\n\t<\/li><li>\u00bd tsp vanilla\n\t<\/li><li>1 cup self-rising flour\n\t<\/li><li>\u00bd tsp baking powder\n\t<\/li><li>Cream or ice cream to top your\n\tsponge pudding\n<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>To begin, you need to preheat your\n\toven to 180C.\n\t<\/li><li>Cut and arrange your fruit in a 1\n\t\u00bd litre ovenproof dish.\n\t<\/li><li>Cream together the sugar and\n\tbutter until light and fluffy.\n\t<\/li><li>Beat in the vanilla and egg.\n\t<\/li><li>Now stir through the flour, baking\n\tpowder followed by the milk. \n\t\n\t<\/li><li>Spoon this mixture on top of the\n\tfruit and spread it around evenly.\n\t<\/li><li>Bake for 25 \u2013 30 minutes until\n\tgolden and your sponge pudding has risen nicely. You can use a\n\ttoothpick to test the middle of the pudding. If it comes out clean,\n\tyour sponge cake is cooked all the way through. \n\t\n\t<\/li><li>Serve as is or top with whipped\n\tcream or vanilla ice cream. Remember, this pudding is best served\n\twarm!\n<\/li><\/ul>\n\n\n\n<p>Winter is almost at an end but those\ncomfort foods and warm sponge pudding will certainly have a place at\nthe table over the next few weeks at least. Remember, just like a\nfruit basket, you can combine various types of fruit in your\ndelicious dish.
