It can be added to your favourite curry, casseroles, and even as a topping on various dishes. You could buy chutney but, if you want something delicious and homemade, you can make your very own.<br \/>\nIngredients:<\/p>\n<ul>\n<li>1 Tbsp oil<\/li>\n<li>4 cups chopped onion<\/li>\n<li>1 Tbsp minced garlic<\/li>\n<li>8 cups fresh fruit (peeled and chopped)<\/li>\n<li>1 cup dried fruit (chopped to the size of raisins)<\/li>\n<li>1 cup sugar<\/li>\n<li>1 cup vinegar<\/li>\n<li>1 cup water<\/li>\n<li>2 small fresh chili peppers or 1 tsp red pepper (crushed)<\/li>\n<li>1 tsp salt<\/li>\n<\/ul>\n<p>Method:<\/p>\n<ul>\n<li>In a Dutch oven or similar dish, heat the oil and cook your onions over a medium heat until they are light brown.<\/li>\n<li>Add the garlic and cook for about 30 seconds.<\/li>\n<li>Add the fruit (fresh and dried), vinegar, sugar, water, salt, and chilis.<\/li>\n<li>Boil over high heat while stirring often.<\/li>\n<li>Reduce the heat and simmer for about 30 to 40 minutes (until thickened).<\/li>\n<li>Take a spoonful of chutney place it on a plate. Draw your spoon through the middle of the chutney and, if it stays separated, it&#8217;s ready. If not, then cook a little longer and test again until it reaches this consistency.<\/li>\n<li>Prepare your jars and fill them to about \u00bd an inch from the rim of the jar. Wipe the rims of the jars and cover with the lids.<\/li>\n<li>Allow your jars of fresh chutney to cool to room temperature before you refrigerate or freeze. You can also process with a water bath and store at room temperature.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Chutney is delicious and can be used in so many recipes.
